Air Fried Chicken Inasal Marinade

 2 piece Chicken Quarter
 3 piece garlic clove, minced
 1 piece red onion, medium size
 1 piece Ginger, thumb
 2 piece Siling labuyo
 2 piece lemongrass, bulb
 2 tbsp Calamansi juice
 5 tbsp Soy sauce
 4 tbsp Vinegar, white
 4 tbsp Brown Sugar
 3 tbsp chicken annato oil

Prepare the mis en place by peeling off the skin of the garlic, onion and ginger.

Using the Breville Blender, combine garlic, oinon, ginger, calamansi juice, lemongrass bulb, soy sauce, brown sugar, white vinegar and annatto oil. Press the "BLEND" function and process until well combined.

Transfer the marinade into a bowl with the chicken quarter legs (make sure you score the meat of the chicken). Marinade for atleast 2 hours (ideal overnight).

Pre-heat Breville Oven to 205 Deg C.

Once pre-heated, transfer the marinated chicken into an oiled fry-basket then brush the chicken with remaining annatto oil.

Air-fry for 30 mins under 205 Deg C.

Once cooked, transfer the chicken inasal into a plate and serve with garlic rice. Enjoy!
