Sausages, Sunny Egg over Roasted Vegetables

2 Bratwurst Sausage (or any sausage you prefer)

1 Carrots, peeled and cut into 1 inch chunks

1 Sweet potatoes, peeled and cut into 1 1/2 inch chunks

1 Sayote, peeled and cut into 1 1/2 inch chunks

1 large white onion, unpeeled sliced into 3

1 head garlic, unpeeled cut in half

1 cup Cabbage, shreded

1 Red bell pepper, sliced

1 Green Bell pepper

4 Brocoli Florets

Olive oil

4 Cauliflower Florets

½ tsp dried Rosemary

Crushed black pepper

salt, to taste

Sunny egg, for garnish

Place the baking rack into the bottom of the oven.

Turn function dial to ROAST. And the Smart Oven™ will automatically open the convection fan, suggest 350F for the temperature, 1:00 for the time.
Press START/CANCEL to Preheat.

Put all the vegetables into the baking pan. Drizzle with oil and season with herbs, salt and pepper. Toss lightly. Making sure all vegetables are covered with oil.

Place the sausages on top.

Bake for 1 hour.
*Chef's Note: Once done. Leave the dish inside for about 5 to 10 minutes.

Serve with a sunny egg. Garnish with fresh parsley or sage leaves.
